Meet The Team

I didn't have a plan.
In 2017 I deferred my teaching qualification for a year and gave myself twelve months to see if I could make a bakery work. I built a website, started an Instagram, and set up stalls at food markets to figure out where I wanted to sit and what I actually had to offer.
I tried wholesale. It was hard work, the margins were tight and the invoices weren't being paid - so I quit and went direct to customer instead, baking out of a tiny flat in Islington on one small oven.
Then 2020 happened. Suddenly everyone was at home, people were looking for ways to send a little thinking of you or a birthday surprise, and orders were flying in. I was working sixteen-hour days across two jobs to keep up. That summer, I had the most wonderful opportunity - a friend offered me a small kitchen space in Clerkenwell. I took it. We ran a café at the front; I baked at the back. It was tiny but it worked.
Over the next few years the team grew - a first employee in autumn 2020, a second in 2021, a third and fourth in 2022. For six years I kept working other jobs alongside the bakery to make the finances work. It wasn't glamorous, it wasn't cute, but it was what I needed to do.
In early 2023 I started looking for a new space. In July 2023 we moved to Broadway Market Mews in Hackney - exactly the kind of space I'd been hoping for. A proper kitchen, and a shop where people can walk in on weekends, have a chat and buy a slice or two.
In 2025 we became a team of five and our community continues to grow. We love our spot in the quiet Broadway Market Mews and we're so lucky to have the kindest & sweetest customers.
The recipes are rigorously tested - most of our signature flavours took months to get right. Alongside the core menu we bring out new flavours every month, we're always looking to have a little fun with the menu; to bring seasonality, and creativity to baking. Quality and consistency matter to us, in the food and in the experience. We want every order to be right and every visit to feel good.
