THIS photo is my pal Khyati and me at Pump Street back in 2018! We drove all the way to Suffolk to visit the Aldeburgh Food Festival and @pumpstbakery. A food pilgrimage, if you will.
We’d discovered Pump Street through @ravneeteats and her inimitable events & parties and I was hooked with the concept of sourdough & sea salt chocolate from Pump Street.
During the visit to Aldeburgh Festival and a tasting with the founders of Pump Street, I was introduced to a new world of chocolate. Of not only single origin but single farm, the complex processes of chocolate production, the parallels of chocolate and sourdough and the beautiful story of how Pump Street came to be a bakery, and then a bean-to-bar chocolate producer, too.
At the time I was 1 year into EKB and I decided that I definitely needed to start using their pastilles in the brownies. Pump Street have a special machine to make their signature, stamped and chunky chocolate chips. The flavours, texture and thickness is exactly perfect for a brownie. 6 years on and I’m still ordering the chocolate for the brownies and some of the cookies.
