It was such a joy to create a cake centred around the floral, fragrant Alphonso mango. We tested a few different flavour pairings before settling on a coconut sponge, Alphonso mango jam and a mango meringue buttercream. This cake had a short, fleeting season and was available from April to the end of May. We created this sunny special for birthdays, anniversaries and a wedding too.
Our celebration cakes featured three light and fluffy coconut sponges, layered with mango meringue buttercream and an Alphonso mango jam before being decorated with fruits and seasonal, edible flowers. Each element is made in house and as with all our cakes, everything is made fresh to order. These cakes are suitable for pick up from our kitchen in Clerkenwell / Islington or for hand delivery across London.
We loved this flavour combination so much that we needed to share it beyond London. Cue the development of the mango & coconut postal cake. A smaller, shorter cake but still packing the big flavours of the original. Two coconut sponges filled with buttercream and a centre of mango jam, coated in a white chocolate shell and toasted, flaked coconut, to keep the cake secure for transit. We added the option to include a reusable gift box with satin yellow ribbon.
Our seasonal special relies on importing the Alphonso mango from India so we decided to donate a portion of sales of each cake to a charity based there. We donated £101 to Khaana Chahiye, a community relief charity based in Mumbai who are supporting vulnerable individuals by providing hot meals and grocery kits. Thank you to everyone who supported this seasonal special, we hope to return with this flavour next year.
